Ingredients
Vegetable oil cooking spray
2 tbsp
Aegean Extra Virgin Olive Oil
3 oz Thinly Sliced Pancetta, chopped into 1/4-inch pieces
½ Medium Onion, finely chopped
¾ cup Ricotta Cheese
⅓ cup
Castella Grated Parmesan
½ cup Frozen Petite Peas, thawed

Freshly Ground Castella Black Pepper

Method
Place an oven rack in the center of the oven and preheat oven to 350°F. Spray baking sheet with cooking spray and set aside.
In a medium skillet, heat the oil over medium-high heat. Add pancetta and cooking , stirring frequently, until brown and crispy (about 5-7 minutes)
Using a slotted spoon, remove the pancetta and drain on paper towels. Add the onion to the pan and cook until translucent and soft (about 5 minutes). Set aside to cool for 10 minutes
In a medium bowl, combine the onion, pancetta, cheeses and peas. Season with salt and pepper.
Using a small spoon, fill each pepper with the ricotta mixture and place on baking sheete.
Bake for 15-18 minutes.
