Orange Scented Date Crescents

Ingredients

1 Cup Pitted Dates
3 Tsp. Orange Zest (finely grated)
1 Tsp. Castella Pure Orange Extract
½ Cup Super Fine Sugar
1 Egg
2 Cups All-Purpose Flour
1 Tsp. Baking Powder
Sugar to Sprinkle

Method

  1. Put the dates and 1 tbsp. of water in a small pan.  Stir over a low heat for 2-3 minutes, or until the dates are softened.  Remove from the heat and stir in ½ tsp. of the orange zest and 1 tsp. of "Castella" Pure Orange Extract.  Let cool.
  2. Line two baking trays with baking paper.  Beat the butter, super fine sugar and the remaining orange zest and "Castella" Pure Orange Extract until creamy.  Add the egg and beat until well combined.
  3. Mix in the combined flour and baking powder until a smooth dough forms.  Cover with plastic, and refrigerate for 30 minutes.  Put half the dough between two sheets of baking paper and roll out into ¼" inch thick.  Refrigerate again if the dough is too soft, and then repeat process.  Preheat the oven to 350° degrees F.
  4. Cut out ten 2 ½" inch circles from the dough with a fluted cookies cutter.  Put 1 tsp. of filling onto each circle and fold over to form a crescent,  pressing the edges to seal.  The pastry should be well filled with the mixture.  Repeat the process with the remaining dough.  Lay them on trays and then brush the tops with water and egg mixture, and sprinkle with the sugar.  Bake for 10-15 minutes, or until lightly golden brown.  Cool on a wire rack and then serve.
