Roast Fish with Rosemary and Garlic


2 Lbs Skinless Monkfish Tail Fillets
(substitutions: Halibut, Cod, Swordfish)
3 Large Garlic Cloves peeled and sliced into slivers
24 small sprigs Rosemary
6 Meaty Bacon Strips
⅓ Cup Aegean Extra Virgin Olive Oil
Salt and Pepper for seasoning
Lemon Wedges for Serving


  1. Preheat the oven to 200 degrees C (400 degree/Gas Oven). Using a small sharp knife, make small incisions in the fish and insert a sliver of garlic and a small sprig of rosemary into each one. Season the fish with salt and pepper and wrap each piece with 2 slices of bacon strips.
  2. Put the fish in a roasting pan and drizzle with Aegean Olive Oil over the tops. Roast the fish for 15 minutes, or until the fish is cooked through. Serve with fresh sliced lemon wedges.
