Ingredients
4 Oz.
Castella Feta Cheese Crumbled
(about 1 cup)
½ Cup Part-Skim Ricotta Cheese
2 Tbsp. Fresh Parsley
(chopped)
¼ Tsp.
Castella Butcher Ground Black Pepper
1 Large Egg
8 Sheets
(about 16" by 12" each)
Fillo Dough
(abut 5 ounces)
4 Tbsp. Butter
(melted)
Method
Grease two 15 ½ by 10 ½ jelly-roll pans. In medium bowl, with fork, mix first 5 ingredients. Arrange filo sheets in one stack. Cut lengthwise into 5 strips; cut each strip crosswise into 5 rectangles. Place cut filo on waxed paper, cover with plastic wrap to prevent filo from drying out.
Place 2 rectangles of filo on top of each other on work surface, brush top lightly with melted margarine. Place 2 more rectangles crosswise on top of first 2 rectangles, brush lightly with more margarine. Place 1 rounded teaspoon filling in center, crimp filo around filling to form a bundle. Repeat with remaining filo, margarine and filling.
Place bundles, crimped-side up, in jelly-roll pans. Brush with melted margarine. If not serving right away, cover and refrigerate. Preheat oven to 400 degrees F. Bake cheese bundles 15 to 20 minutes, until golden. Serve hot.
