Mediterranean Broiled Chicken


4 Tbsp. Un-Sweetened Yogurt
3 Tbsp. Tomato Paste
1 Tbsp. LIRA Pure Olive Oil
¼ Cup Fresh Basil (lightly crushed)
2 Garlic Cloves (roughly chopped)
4 Chicken Quarters
Salad Greens (to serve)


  1. Combine the yogurt, tomato paste, olive oil, basil leaves, and garlic in a small bowl and mix well.  Put the marinade into a bowl large enough to hold the chicken quarters.  In a single layer.  Add the chicken quarters, making sure they are thoroughly coated in the marinade.
  2. Marinate the chicken in the refrigerator for at least 2 hours or overnight.  Remove and leave, covered at room temperature for 30 minutes before cooking.  Place the chicken over a medium hot barbeque and cook for 30-40 minutes, turning frequently.
  3. Test for readiness by piercing the flesh at the thickest part usually at the top of the drumstick.  If the juices run clear, it is cooked through, but if the juices are pink cook for 5-10 minutes longer.
  4. Serve hot with salad greens.  This is also delicious eaten cold.
