Fresh Quinoa Salad


12 cups water
1 1/2 cups LIVE Quinoa (rinsed)
5 pickling cucumbers (peeled and cut into cubes)
1 small red onion (cut into small cubes)
1 large tomato (cored, seeded and diced)
1 tbsp. Castella Parsley Flakes
1 tbsp. Castella Crushed Mint Leaves
1/2 cup Aegean Extra Virgin Olive Oil
1/4 cup red wine vinegar
3 tbsp. Castella Lemon Juice
1 1/2 tsp. salt
3/4 tsp. Castella Ground Black Pepper
1 avocado (peeled, seeded and diced - for garnish)


  1. Bring water to a boil. Add Quinoa, stir once and return to boil. Cook uncovered for 12 minutes.
  2. Strain and rinse quinoa with cold water. Shake well to remove all moisture. When dry, transfer to large bowl.
  3. Add cucumber, onion, tomato, parsley, mint, olive oil, vinegar, lemon juice, salt and pepper. Toss well.
  4. Garnish with avocado and enjoy!
