Mediterranean Quinoa Salad


2 cups water
1 cup uncooked LIVE Quinoa
1/3 cup Red Wine Vinegar
¼ cup Aegean Extra Virgin Olive Oil
1 small red onion – diced
1 red pepper – diced
2 Roma tomatoes – seeded and diced
½ cup Castella Kalamata Olives – chopped
½ cup Castella Feta Cheese – crumbled
1 Tbsp Castella Cilantro
Castella Ground Black Pepper
3 Tbsp. Castella Lemon Juice


  1. Bring Quinoa and water to a boil over medium heat. Reduce to a simmer and cook for 15-20 minutes or until water is absorbed in quinoa. Fluff with fork and cool for 5 minutes.
  2. Add oil and vinegar and let quinoa come to room temperature.
  3. Add onion, tomatoes, pepper, olives, cilantro, salt and pepper. Stir gently. Add feta cheese and gently combine.
  4. Chill for 2 hours to let flavors combine. Add lemon juice over salad right before serving to brighten flavors.
